| Ridiculously easy baked tofu |
This is hardly even a recipe, but it comes in handy for when you don't have enough energy, time, or brain cells left to cook something elaborate. And it does taste good, as low-brow as it is. :)
For a simple vegan meal, serve with steamed veggies and sweet potato. Leftovers are good in sandwiches and salads.
I often leave the tofu marinating in the fridge for a few days, taking out a single serving at a time to bake in the toaster oven (since a single serving fits in there - save on your electric bill).
Use a low-fat or fat-free salad dressing for a low-fat recipe. |
